Ingredients
- Old Fashioned Oats, 8 cups
- Coconut Oil, 1 cup
- Honey, .5 cup
- Maple Syrup, .5 cup
- Vanilla, 2 teaspoons
- Kosher Salt, 2 teaspoons
- Cinnamon, 1 teaspoon
- Dried ginger, .5 teaspoon
- Ground cloves, .25 teaspoon
- Pecan halves, 2 cups
- Craisins, 2 cups
Instructions
- Preheat oven to 350 Fahrenheit and line a full baking sheet (or two half sheets) with parchment paper;
- In a small saucepan, combine coconut oil, honey, maple syrup, and vanilla over low heat; warm until melted; stir in salt and spices; remove from heat;
- In a large bowl, combine oats with melted oil and sugars; stir well;
- Spread out over pan and bake for 20-24 minutes (it likes 20 in my oven); turning the pan mid way through to prevent burning;
- During the last 8 minutes of cooking, add nuts to granola and continue cooking;
- Remove from oven, pour craisins on top, and using a spatula, press granola firmly down onto the pan (this is what will give you clumps);
- Allow to cool for at least 20 minutes, then transfer to an air tight container.
