Gluten-Free Apple Crisp

Bake Time: 45 minutes

• Granny Smith Apples, 8 large, cored, and chopped
• Granulated Sugar, .25 cup
• Brown Sugar, .1.25 cup, divided
• Corn Starch, .25 cup
• Cinnamon, 1 teaspoon
• Pumpkin Pie Spice, 1 teaspoon
• Rolled Oats, 2 cups
• Almond Meal, 1 cup
• Walnuts, roughly chopped, 1 cup
• Butter, 12 Tbsp., melted, plus extra for greasing the baking dish
• Vanilla Ice Cream (optional…but not really)

  1. Preheat oven to 350° F;
  2. Grease a 9×13 pan or 2.5 quart baking dish with butter;
  3. Throw in your chopped apples; add granulated sugar, .5 cup brown sugar, cornstarch, and spices; stir;
  4. In a separate mixing bowl, stir together oats, almond meal, remaining brown sugar, and walnuts; spread out over the fruit in baking dish;
  5. Pour the melted butter over the topping;
  6. Bake for 40-45 minutes or until the crust is golden;
  7. Serve warm or room temperature, topped with ice cream.
